Kimchi is one of the best recipe of Korean cuisine , Korean people use it as a side dish made from salted and fermented vegetables ,main vegetables of this recipe is Napa cabbage and Korean radishes .In Korean it is called Pogi-Kimchi or Tongbaechu Kimchi .There are lots of methods to make Kimchi in your own way with different different vegetables.Traditionally Kimchi was stored underground in jars to keep it cool in summer .So here am sharing the recipe of traditional Pogi-Kimchi.

Ingredients :

  • Spring Onion
  • Napa Cabbage
  • Garlic
  • Korean Radishes
  • Carrot
  • Salt
  • Rice Flour
  • Hot pepper flakes
  • Honey Or Sugar
  • Fish Sauce (Add Marmite to replace fish sauce)

How To Make:

  • Take Napa cabbage remove top part and cut it in half and tear off .
  • Now we need to salt but before salting we need to soak it in cold water because the wet leaves will absorb salt more easily.
  • Now take Kosher Salt and then sprinkle it on each cabbage leaves between the leaves,stem part is more salted , now put it aside and every 30 minutes turn it over so that evenly salted and leave it for 2 hours.After 2 hours squeeze extra water from cabbage.
  • Next step is prepare porridge ,so for making porridge we need water and sweet rice flour , mix them well and boil this mixture ,when it starts boiling add brown sugar or honey , mix them well   and remove it from heat .
  • Now chop all vegetables and make a paste from onion , garlic and ginger.
  • Take porridge mixture, onion,ginger, garlic paste and hot pepper flakes , mix all the ingredients very well , now our sauce it ready .
  • Apply this sauce on every leaves of cabbage and store it in jar.Your Kimchi is ready.
